Daybreak Honey

What “Raw” Really Means

Daybreak honey is sold raw—that means unpasteurized and not diluted with water—so it keeps the natural vitamins, enzymes, and active phytonutrients found in the hive. That’s why it tastes so fresh and true to the local blooms.

Bee Facts: By the Numbers

  • 4.5 million honey bees are invited to live in Daybreak each year—right here in the neighborhood.
  • Not yet fully developed: With over half of Daybreak currently built out, open fields and gardens provide abundant forage for our bees.
  • Seasonal harvests: Each year’s bees leave us with thousands of pounds of raw honey to enjoy.
  • Winter getaway: When the weather turns chilly, our bees head to California for the season while professional apiarists care for the hives.

Our goal is simple: create a thriving environment where bees can pollinate neighborhood flowers, parks, trailside plantings, community gardens, and nearby family farms.

Simple Storage Tips

Store honey at room temperature with the lid tightly sealed. Over time, raw honey may naturally crystallize. To re-liquify, place the jar in a bowl of warm water and stir gently until smooth. Avoid microwaving.
